Grilled Chicken Caprese

Grilled Chicken Caprese is fresh, delicious and ready in under 30 minutes, which makes it an easy meal any night of the week.
I have to call it like I see it and this is definitely a winner winner chicken dinner. These chicken breasts are full of fresh flavor from a healthy dollop of pesto, ripe roma tomatoes and lots of fresh basil.
Then, you top it all off with a generous slice of melted fresh mozzarella. How can you beat that?
It gets even better because grilled chicken caprese is so quick and easy, that you can make it for dinner any night of the week. Imagine that.
This chicken that’s full of great flavor and bursting with vibrant color can be on your plate whenever you have a craving for delicious food. It’s that simple, really.
One of the ingredients that makes this recipe both easy and so flavorful is jarred pesto. I try to keep this in my fridge at all times. It’s such a versatile sauce and it adds so much flavor to so many dishes.
The prep work for this dish is really quite minimal. I like to pound the chicken breasts out slightly, just to make sure they’re a uniform thickness so that they cook evenly.
It takes a few minutes, but it’s worth it because the chicken will cook up so much faster. It will actually save you time in the long run.
Other than that step, after slicing some tomatoes and fresh mozzarella, then chopping some basil, all that’s left to do is grill up the chicken. It’s all totally doable in under 30 minutes! Serve it up with some crusty bread and this easy grilled romaine lettuce salad with fig vinaigrette and your meal is complete.
Grilled Chicken Caprese

Grilled Chicken Caprese is fresh, delicious and ready in under 30 minutes, which makes it an easy meal any night of the week.
Ingredients
- 4 chicken breasts
- salt and pepper
- 8 tsp prepared pesto
- 4 roma tomatoes, cut into 12 slices
- 8 oz fresh mozzarella, sliced crosswise and then in half
- fresh basil, chopped
Instructions
- Heat a grill pan or outdoor grill to medium heat.
- Pound each chicken breast out so they are a uniform thickness.
- Season chicken with salt and pepper.
- Grill chicken for 4 minutes.
- Turn chicken over and spread 2 tsp pesto on top of each piece.
- Top each chicken breast with 2 tomato slices and 2 or 3 pieces of mozzarella.
- If you're cooking this on a grill pan, tent the chicken with foil, so the cheese will melt. If you're on the outdoor grill, just put the cover on.
- Grill for another 4-6 minutes, until chicken is cooked through and cheese has melted.
- Sprinkle chicken with basil and serve.
