My instant pot beef au jus is based on one of my mother-in-law’s tried and true recipes. It always turns out tender and so incredibly flavorful.

Her version is made in the slow cooker and it’s been popular with the whole family for years.

Using an Instant Pot Speeds up the Process

The slow cooker works great for this recipe and is how my mother-in-law makes it. But, if you need this to be done in less than 8 hours, the instant pot is the way to go.

From start to finish my version is ready in just 1 hour. And, it still has all of that delicious slow cooked flavor.

Tweaking the Recipe for a Healthier Option

I also tweaked the original recipe a little bit. My mother-in-laws recipe was just chuck roast, onion soup mix and water.

The onion soup mix tastes great, but it’s high in sodium. In general, I try not to use processed food in my recipes.

So, when I discovered this recipe for homemade onion soup mix from my blogging friend Debi at Life Currents, I had to try it out. It’s so simple to make and SO much lower in sodium than the packaged mix, plus it tastes great.

The final change I made to this recipe was to add a little white wine rather than just water. I find it adds more depth to the flavor.

I really love this beef because not only is it super tasty, it’s also very versatile. It’s great for French dip sandwiches and also great to make Philly cheesesteak sandwiches.

I’ve also chopped or shredded it, mixed it with marinara sauce and served it over pasta. I also love just slicing it and serving it with mashed potatoes. I’m getting hungry just thinking about it!

Instructions

  1. Heat olive oil in instant pot on the sauté function.
  2. Brown roast on for 3 minutes on each side.
  3. Remove from Instant Pot and set on the rack.
  4. Place the rack in the Instant Pot.
  5. Pour the water and the wine over the roast.
  6. Sprinkle with the onion soup mix.
  7. Set the Instant pot on the meat/stew function for 45 minutes.
  8. Allow the steam to slow release for 10 minutes.
  9. Carefully release the steam valve.

  2. I love the tweak with the ingredients and leaving out the onion soup mix…. were really watching the Salt intake and Im shocked at how much sodium some prepackaged things have! This sounds just perfect for a cool spring day!
