Hey everyone, once again it’s time for Freaky Friday! Can I get a WOOP WOOP?!! If you’re new here, this is the day when some of my blogging friends and myself get together and each cook something from someone else’s blog.
Then we share ALL of those recipes with YOU. My good friend, Michaela, from An Affair from the Heart is the creator of this event and she is the one who coordinates everything. It’s an event that takes place four times a year.

This round I was assigned to Sheila from Life Love and Good Food . Let me tell you, she has some incredible looking food!
She specializes in sharing quick and easy recipes with clear instructions that are easy for home cooks to understand. Among the recipes she shares on her website, you’ll find many family favorite recipes. She’s also a cookbook author and has a cookbook dedicated to easy chicken recipes.
As you might imagine, it was difficult to choose just one recipe to make. I really enjoyed browsing through her recipes and definitely have more that I would like to try.

With all of those delicious sounding recipes, you can imagine how difficult it was to choose just one. But I finally settled on her Shrimp Broccoli Stir Fry. I ended up choosing this recipe because it sounded so tasty, as well as perfect for a quick and easy weeknight meal dinner.
As the recipe suggested, it was SO quick and easy to make and the flavor was outstanding. The meal was quickly devoured by my family. As far as the easy part goes, from start to finish, this recipe took only a quick 30 minutes.
When you make this recipe, you want to make sure that all of your ingredients are lined up and ready to go. Once you start stir frying it goes very quickly. To keep things easy for myself, I used a bag of broccoli florets rather than cutting up a head of broccoli.
I used frozen shrimp, so while I was prepping the recipe of the ingredients, I defrosted it in a bowl of cool water. Once the shrimp was defrosted, I made sure to dry it off really well so that the cornstarch would stick to it.
I served this stir fry over rice and to make it really easy, I used pre-cooked frozen rice. You could also use a pre-cooked shelf stable rice packet to keep things easy. If you cook the rice yourself, you’ll want to make sure it’s simmering before you start the stir fry so that it’s ready at the same time as the stir fry.

Weeknight Broccoli Shrimp Stir Fry

Weeknight Broccoli Shrimp Stir Fry is an easy 30 minute one pan wonder. You’ll be amazed at how quickly it comes together along with it’s incredible fresh flavor.
Ingredients
- 1 lb medium shrimp, peeled and deveined
- 1 tbsp cornstarch
- 2 1/2 tbsp canola oil, divided
- 1/4 cup green onions, cut diagonally into 1-inch pieces
- 2 tsp minced fresh ginger
- 3 cloves garlic, thinly sliced
- 2 cups broccoli florets
- 1/2 medium bell pepper, thinly sliced
- 1/4 cup low sodium soy sauce
- 2 tbsp rice vinegar
- 1 tsp honey
- 1/8 tsp crushed red pepper
- Cooked rice
- sesame seeds - optional
Instructions
- With a paper towel, blot shrimp dry and place in a medium bowl.
- Sprinkle shrimp with cornstarch, tossing to coat.
- Heat a large skillet or wok over high heat.
- Add 1 tsp of oil to the pan, swirling to coat.
- Add coated shrimp to the pan and cook for about 4 minutes, stirring constantly until the shrimp are opaque and a light golden color.
- Transfer shrimp to a plate.
- Add 1 1/2 tsp oil to pan, swirling to coat.
- Add green onions, ginger and garlic. Stir fry until fragrent, about 45 seconds.
- Remove from pan and add to the plate of shrimp.
- Add remaining tbsp oil to pan.
- Add broccoli and red pepper to the pan.
- Stir fry for 2 minutes.
- Add shrimp and onion mixture back to the pan.
- Pour in soy sauce, rice vinegar, honey and red pepper flakes.
- Cook for another minute or so, until the broccoli is crisp tender and the sauce has thickened.
- Serve over rice.
- Garnish with sesame seeds if desired.
Notes
This recipe cooks up very quickly, so you'll want to make sure you have everything prepped and ready to go before you start cooking.

This is perfection!! Its packed with huge flavor but comes together so quickly! This is going on next weeks dinner plan.
30 minute meals are my go-to favorite mid-week recipes. Came over to see if frozen shrimp is ok to use since I have it in my freezer. Yippee – will make this one tonight.
@Sandra Shaffer, Yes, frozen shrimp is just fine! That’s what I used in the recipe. I just defrosted it in a bowl of cold water before cooking it.
