DIY Cranberry Juice

I totally over-bought cranberries at Thanksgiving. I was at Sam’s Club and I threw the giant economy size into my cart.
I don’t know what I was thinking! Anyways, I’ve had these cranberries in my refrigerator and wasn’t sure what to do with them.
I finally decided that I would try making juice out of them. I love cranberry juice and I thought freshly made cranberry juice would be delicious.
I pureed the berries in the blender with some honey and water. The result was very fresh and delicious and I love the flavor that the honey gave to the juice.
If you don’t care for honey, you could also sweeten it with agave nectar, which has a more neutral flavor. Either way it’s very tasty and WAY better that any cranberry juice cocktail that you buy at the store!
DIY Cranberry Juice
- fresh cranberries
- honey
- water
Put desired amount of cranberries in blender. Add desired amount of honey.
I started with about 1/4 cup and kept adding honey until it was sweet enough for me. The total amount of honey I used was about 3/4 cup for a juice that’s fairly tart.
Cover with water.
Blend until completely pureed.
Strain mixture through a fine mesh strainer into a bowl.
Put strained puree back into blender and cover with water. Blend again for a couple of minutes and strain into bowl once more.
Taste juice and add more honey, if necessary. Pour juice into a pitcher and store in the refrigerator.
