Quinoa Apple Breakfast Bites

Have you tried quinoa yet? If you haven’t, you really should!
It’s such a healthy grain. It’s a good source of quality protein and it’s a good source of fiber. So, what better way to start your day than with these delicious little quinoa apple breakfast bites?
These little bites of goodness are super easy to make. You can even make them ahead of time and then in the morning just pop a couple into the microwave for 15 seconds and breakfast is done!
The protein and fiber will help keep you satisfied until lunchtime and they taste great. The quinoa is a little nutty and the apple adds some crunch and sweetness.
To further add sweetness and flavor I added some real maple syrup along with a little cinnamon. DELICIOUS!!
Quinoa Apple Breakfast Bites
Makes about 24
- 2 cups cooked quinoa
- 1 apple, chopped into small pieces
- 3 eggs
- 1/4 cup real maple syrup
- 1/2 tsp cinnamon
- pinch of salt
Preheat oven to 350 degrees. Spray a mini muffin pan with cooking spray.
Put all ingredients into a medium mixing bowl. Stir until well combined.
Scoop mixture into prepared pan.
Bake for about 12-13 minutes, just until set. Do not overbake!
Cool slightly before removing from pan. Eat immediately or store in the refrigerator for later.
If eating later, reheat in the microwave for 15 seconds.

Smell and taste is great but did not hold its shape. I baked 12 minutes til appeared set. Go the xtra minute?
I would try cooking them the extra minute and see if that makes a difference. They do tend to be a little fragile, but they should hold together. Glad to hear you liked the taste!

First time cooking Quinoa tonight. My daughter and I have to be yeast, gluten, sugar, starch and dairy free. Just wondering if the maple syrup can be exchanged with agave… or if maple syrup is ok..
Jenny – you definitely could substitute agave for the maple syrup, it just won’t have the maple flavor.
Could you freeze these? sounds wonderful, but it’s just me.
I haven’t tried freezing these, Polly, but I think they would probably freeze just fine. I would just pop them in the microwave for a few seconds to defrost them.
Was really excited to try this easy recipe! Unfortunately it was too egg-y for our taste buds. I wonder how it would be with applesauce instead of egg?
Ami – The eggs are what bind this together and I don’t think the applesauce would do that. If you cut the eggs down to two instead of three maybe it wouldn’t be too egg-y for you, but you’d still have something to bind it together. If you did that, you could add about 1/4 cup applesauce to further decrease the egg flavor. I hope this helps. 🙂

Does it have to be a mini muffin pan, could I use a regular size one and just add a minute to the cook time?
Bethany, I think a regular muffin tin would work just fine. Another minute or two should be all you need to add to the cooking time.

Unfortunately, I don’t have the nutritional value for these.
I just made these muffins. It took on the perfect form. Unfortunately it is lacking flavor. Very bland. Do you have any suggestions to add additional flavor without using dairy products?
Starla, you could try adding a 1/4 tsp of nutmeg to see if that adds some additional flavor. I hope this helps!
