Baked Cheddar Ranch Chicken with Spicy Ranch Dip

This chicken could be your lifesaver on a busy night…..yep, that’s right. You’re going to love it because it may be the easiest chicken dish…..E.V.E.R. You only dirty one small bowl and a baking dish, plus, since it bakes in the oven, you don’t even mess up your stove. Your family will love it because it’s got a crispy coating on the top that’s cheesy AND has the great flavor of ranch. Serve it with this spicy ranch dip, some sweet potato fries, a salad and you’ve got a well balanced meal that’s on the table in just over 30 minutes and everyone will be happy!

Baked Cheddar Ranch Chicken with Spicy Ranch Dip

For chicken:

  • 6 boneless chicken breasts
  • 1 cup plain panko bread crumbs
  • 1/2 cup shredded reduced fat sharp cheddar cheese
  • 1 1/2 tbsp Hidden Valley Ranch seasoning
  • pepper to taste
  • Olive oil

For dip:

  • 1 (16 oz) container light sour cream
  • 3 tbsp Hidden Valley Ranch seasoning
  • 1-2 tsp sriracha sauce (depending on how spicy you want your dip)

Preheat oven to 400 degrees.

In a small bowl, mix together bread crumbs, cheese, ranch seasoning and pepper.

Place chicken in baking dish that’s been coated with cooking spray.

Top each piece of chicken with the bread crumb mixture.

Drizzle olive oil over the top of the bread crumb mixture.

Bake for 30-35 minutes, until chicken is cooked through and topping is golden brown.

To prepare dip, combine sour cream, ranch dressing and sriracha.

Serve dip with chicken.
