I like green beans as much as the next next person, but let’s be honest, plain steamed green beans can be a little boring.

We need to ramp them up and bring them to the next level and then we can get excited about eating a nice large portion of our veggies. Am I right??

Well that’s what goin’ on today. We’re going to take the humble green bean and add some amazing extras like garlic, tomatoes, cheese and of course, BACON, because we all know everything’s better with bacon.

A Side Dish in Less Than 20 Minutes

Now, don’t worry, taking your green beans to the next level isn’t hard or time consuming. It’ll maybe take you 20 minutes. And believe me, the flavor treat you’re going to get is well worth the 20 minutes.

If you already happen to have some cooked bacon on hand, it will be even quicker.

I will often fry up a whole package of bacon that I’ve chopped up and then just store it in the freezer so I can pull some out whenever needed. I’m mean really, you can never have too much bacon on hand, can you? 😉

Green Beans with Tomato and Bacon

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 4 slices bacon, thinly sliced crosswise
  • 12 oz fresh green beans
  • 1 large clove garlic, minced
  • 1 large roma tomato, chopped
  • 1/4 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • grated parmesan cheese

Instructions

  1. In a small skillet, fry bacon pieces over medium heat, until browned and crispy.
  2. Place green beans in a microwave safe bowl, cover with plastic wrap and microwave on high for about 3 minutes, until beans are tender.
  3. Remove bacon from pan and drain on paper towels. Set aside.
  4. Add 2 tbsp of bacon fat to a large skillet and heat pan over medium heat.
  5. Add garlic and sauté just until fragrant, about 30 seconds.
  6. Add tomatoes to pan, stirring frequently until tomatoes start to break down and release their liquid, about 4-5 minutes.
  7. Stir in thyme, salt and pepper.
  8. Add beans to the tomato mixture, tossing until well coated.
  9. Top with reserved bacon and parmesan.

Notes

I recommend cooking up extra chopped bacon and freezing the extra. That will cut down on the cooking time next time you make these green beans.
