Spicy Italian Sausage and Peppers

Spicy Italian Sausage and Peppers is bursting with great Italian flavor. It’s an easy meal that’s perfect for weeknight family dinners as well as weekend dinners with friends.
I’m just going to say it, this Italian sausage and peppers will knock your socks off. It’s so full of flavor and it will fill your kitchen with the most delicious aroma as it simmers on the stove. It only takes about 30 minutes of hands on time to prepare before it simmers with just the occasional stir.
I like to keep this meal low-carb by serving it over zucchini noodles, but it would also be amazing over your favorite pasta. And if you’re not into low-carb, you must serve it with some crusty bread to dip in that delicious sauce.
Spicy Italian Sausage and Peppers

Spicy Italian Sausage and Peppers is bursting with great Italian flavor. It's an easy meal that's perfect for weeknight family dinners as well as weekend dinners with friends.
Ingredients
- 3 tbsp olive oil, divided
- 8 hot Italian sausage links
- 1 medium onion, sliced
- 1 large red bell pepper, sliced
- 1 sprig fresh rosemary, finely chopped
- 1 tbsp fresh thyme, finely chopped
- pinch of red pepper flakes
- 1 (8 oz) pkg sliced cremini mushrooms
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (28 oz) whole San Marzano tomatoes
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1/3 cup fresh basil, chopped
- 1/4 cup fresh parsley, finely chopped
- zucchini noodles or cooked pasta for serving
Instructions
- Heat 1 tbsp olive oil in a deep pot over medium heat.
- Add sausages and brown on all sides, they will not be cooked through.
- Remove sausages from pot and set aside.
- Add remaining 2 tbsp olive oil to pot.
- Add onion and peppers to the pot and sprinkle with the rosemary, thyme and red pepper flakes.
- Sauté until they begin to soften, about 5 minutes.
- Stir in mushrooms and continue sautéing until mushrooms release their liquid.
- Add garlic and sauté for 1 minute more.
- Stir in both cans of tomatoes, salt and pepper, breaking up the whole tomatoes with a spoon.
- Add sausages back to the pan and stir in basil and parsley, bring mixture to a bubble.
- Reduce heat, cover and simmer for at least 45 minutes to allow flavors to develop.
- Serve over zucchini noodles or pasta.

This looks great and I love using San Marzano tomatoes. We have tried to grow them several years, but they just don’t like our soil or climate (or us?) for some reason, so I either use our other tomatoes or buy them.
