Spinach, Bacon and Gruyere Frittata

I’m just going to say it….I may have a slight obsession with frittatas going on right now. But, let me tell you why.

They are so versatile and you can add just about anything you want to them. Plus, you can make one at the beginning of the week and have a lovely slice of frittata for breakfast all week long.

That’s right, a slice of this deliciousness will reheat in the microwave in about 30 seconds and then you’re in frittata heaven! That’s a pretty good grab and go breakfast, in my opinion.

This particular frittata is bursting with flavor. The bacon gives it a nice smoky flavor and the gruyere cheese has a nice flavorful bite to it. It’s also so easy to make and is perfect for a weekend brunch with friends or as I said earlier, making at the beginning of the week and refrigerating or freezing until you’re ready to reheat.

Spinach, Bacon and Gruyere Frittata

  • 4 slices bacon, chopped
  • 3 cups fresh baby spinach
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 10 eggs
  • 1/2 cup milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3 oz shredded gruyere cheese

Preheat broiler.

Whisk together eggs, milk, salt and pepper, set aside.

Cook bacon in a large skillet (use a cast iron skillet, if you have one) over medium heat, until crispy. Remove bacon from pan and drain on paper towels.

Leave bacon drippings in the skillet and add spinach, garlic and green onions. Saute until spinach has wilted and most of the moisture has evaporated.

Pour egg mixture over spinach. Sprinkle bacon and cheese over egg mixture.

Gently stir egg mixture, scraping around the edge of the pan and across the bottom for about 1 minute. Cook for an additional 4 minutes.

Put pan under the broiler for 3-5 minutes, until it turns light brown and looks set. Watch it very closely, it goes very fast.

Remove from broiler and cover with foil. Let sit for 5 minutes.

Cut into slices and serve.

Or, if you’re making this ahead, cut into slices, put in zip-loc bags and refrigerate or freeze. Reheat in the microwave, about 30 seconds if refrigerated or about 1 minute if frozen.
