Zucchini Noodles with Roasted Tomatoes, Chicken and Pesto

Zucchini noodles with roasted tomatoes, chicken and pesto is a delicious, healthy dinner that’s on the table in about 20 minutes.
We’re talking quick and easy here today people, I mean, like seriously under 30 minutes quick and easy. Not only are zucchini noodles healthy, they’re also extremely quick to prepare. Do you have a spiralizer yet? If you don’t, you can still easily make them with a box grater, the noodles will just be shorter.
I always try and have cooked chicken on hand, which always speeds up dinner preparation. I used leftover grilled chicken in this dish, but any cooked chicken you have on hand would work equally well or just pick up a rotisserie chicken. I also love to use prepared pesto which I also try and keep that on hand in the fridge, it’s such a great flavor booster. I really like the pesto they sell at Costco, but any brand will work just fine.
Roasting the tomatoes is also incredibly easy. After tossing them with a little olive oil and seasoning with some salt and pepper, they go into the oven for only 10-12 minutes. What comes out of the oven is nothing short of amazing, seriously. The flavor is so rich and adds an incredible depth to the dish, you will want to gobble it down, for real.

- 2 heaping cups grape tomatoes
- 1 tbsp olive oil
- salt and pepper
- 4 medium zucchini
- 1/3 cup prepared pesto
- 1 lb cooked chicken, thinly sliced or shredded
- fresh basil, thinly sliced (optional)
- grated parmesan
